Reconnue en 1977, elle s'étend sur plus de 20 000 hectares, embrassant les départements du Var, des Bouches-du-Rhône et un village des Alpes-Maritimes. Le terroir varié des Côtes de Provence, alternant entre zones calcaires au nord et ouest et cristallines au sud et est, façonne des vins rouges distinctifs. Les cépages principaux tels que le Grenache, le Mourvèdre, la Syrah, le Cinsault, et le Tibouren, contribuent à la richesse aromatique des vins, offrant une palette de saveurs allant des petits fruits rouges aux épices, avec des notes de violette et de mûre pour les jeunes vins, évoluant vers des arômes plus complexes et épicés avec l'âge.
