Breeding
Careful élevage in oak barrels imparts solid structure and aromatic richness to this cuvée, whilst preserving the fruity and spicy characteristics of the grape varieties.
On the eye
Deep, intense garnet colour, suggesting excellent maturity and concentration.
On the nose
Intense aromatics of dark cherry and plum, complemented by thyme and rosemary notes. Secondary aromas of leather and tobacco speak to its complexity and evolution in bottle.
In the mouth
Velvety texture with well-integrated tannins framing ripe dark fruit, spice and garrigue. The finish is long and savoury, leaving a lingering impression of the wine's terroir.

CHATEAU LE BOUIS

Set in Gruissan, in the Aude, Château le Bouis covers 35 hectares within the Corbières appellation, its vineyards facing directly onto the Mediterranean across alluvial, clay-limestone and galetted soils. Founded in 1771 as the Domaine de l'Œil de Pal, the estate was taken over in 2009 by Frédérique Olivié, who has since committed it to organic conversion and restored its standing — earning recommendations from both the Guide Hachette and Bettane+Desseauve. At Halles Quercamps, we have selected this estate for the rigour of its viticulture, the breadth of its Mediterranean grape varieties — Syrah, Grenache, Carignan, Mourvèdre, Viognier — and the consistency it achieves across its reds, whites and rosés.
